Yup, definitely possible Cobalt. I'm running Dual Monitors at the moment with the 560 Ti. It's not bad, I just can't run BF3 with the other monitor lol
I'll most likely end up buying another 560 and just running SLI when I get another monitor. I figured if I had 3 monitors, I could just go ahead and run it with the ATI card while I wait on the 560.
