I would say get the 64 bit Win 7. I use it and it works flawlessly for me. And get Pro. If you do have any programs that will not run under Win 7 you can download the Virtual PC and use XP mode.

I would get Win7 Home Retail. You will get 32 and 64bit versions... of which 99.9% of the time you should use 64bit. You also don't get any of the OEM issues like MS not allowing activation after changing your motherboard etc. However if you did choose OEM and your key didn't work after changing the motherboard you can just ring them and say that your old motherboard died. They're usually pretty easy and will reactivate your copy of Windows.
There's always a good rule of the thumb when choosing your Windows edition and that is if you don't know why you would need a specific edition then you don't need it at all.
edit: Just noticed how high your prices are for Win7. Wow, this is probably the first time in the history of PC's where the UK isn't getting ripped off but you US guys are. $180 for Win7 Home Retail?!

I did need the Virtual PC for one of my programs. It is used just in the Jewelery Industry and ran wonky under Win 7.

Why Go Pro?
If you...

...routinely move between domain and workgroup networks (such as a home or branch office network)

...need support for Windows XP-compatible applications that just don't run under Windows 7
*
...prefer to back up to a network share without using third-party backup programs
...Windows 7 Professional's a no-brainer choice.
