I just finished the last of the WaW challenges, so I've got 100%. Just thought I'd throw a few comments out on the ones that I found hard to get:
Oh No You Don't--blow up a betty to kill the guy who just set it. I don't know if you can get this by tripping up one of the guys who carry the things around as they run because I got it before that started happening, but this one is almost totally up to luck. Bomb Squad helps.
Flawless--Very hard to get if you actually, like, play and not hide the whole round. Watch out for doggies. (no deaths in a full length round)
Invincible--took a little while; the frustrating thing about it is how close you THINK you are when you finally die, or thinking you should have gotten it but didn't. (5 regens in a row from enemy damage)
Shades--hard as hell. You lost a good perk by wearing the stupid things, and then you apparently have to be RIGHT where the flare will land for it to affect you, and then you have to kill the right guy. This one took me several days of actually trying to get it, running toward every flare I saw.
War Hero--Have to kill the guy capping your last flag in War mode, then recapture it. It's very difficult to get this because the momentum in this mode makes it VERY easy for the other side to cap that last point.
Got 'em--The very poor splash damage of the tanks makes this a matter of luck, catching 3 saps in a tight spot.

P.S. I hated getting headshot challenges with the shotguns, and the BAR. Out of all of them, the BAR is the hardest weapon to get headshots with.
