Well for every class of weapons, ex. being smg's and lmg's, you need to meet the following requirement for each gun. You need to get x amounts of kill with that gun and x amounts of headshots with that gun.

So if you do that with all smg's, your uzi will be gold plated. The same goes for all the other weapon classes. Only one gun in each class goes gold. Desert Eagle is automatic when you reach lvl 55.

I found a 24/7 Wet Work server when I was unlocking my gold sniper rifle, I think it took me 2 days of nonstop sniping to get it but it's about the easiest sniping in the game.
